Use a small amount of sauce in the making of the pocket patty. You may have difficulty sealing the burger. It can be done. You just have to make sure the sauce does not get to the edges of the pocket. Also, make sure you pack the inside of the pocket so there are no spaces. The meat juices can build in the center of the pocket. If you notice the center of the patty bulging while cooking poke a hole to let the meat juices out.
